Peach Cobbler - The Peach Pelican

The Peach Pelican’s Easiest Fresh Georgia Peach Cobbler Ever


Ingredients:

1/2 cup unsalted butter

1 cup all-purpose flour

1 3/4 cup of sugar, divided

1 tablespoon baking powder

1-2 tablespoons of The Peach Pelican’s Sweet Darlin’ Dust (taste to see if you want more added)

A pinch of Salt

1 cup of milk (preferably whole)

4 cups of fresh Georgia peach slices

You can also sprinkle in fresh blueberries or blackberries

Serve with vanilla bean ice cream or sorbet

Pre-heat oven to 375°F.

Melt Butter in 13 x 9 baking dish or medium black iron skillet.

Combine flour, 1 cup sugar, baking powder, and salt; add milk slowly, stirring just until dry ingredients are moistened. 

Pour batter over butter. Do not stir.

Bring remaining 3/4 cup of sugar, peach slices and The Peach Pelican’s Sweet Darlin’ Dust to a boil over high heat, stirring constantly, pour over batter. Do not stir.

Sprinkle with more of The Peach Pelican’s Sweet Darlin’ Dust.

Bake at 375°F for 40 45 minutes or until gold and bubbly.

Serve cobbler warm (if there are leftovers, the cobbler is delicious cold too!)

Just Peachy Split Smoked Chicken

Rubbed with The Peach Pelican’s Grilling + BBQ Dust

Ingredients:

1 whole chicken (3 pounds)

4 Tablespoons of The Peach Pelican’s Grilling + BBQ Dust (If you want a sweeter rub, just add a little more dark brown sugar).

Smoking Method:

An hour or three before cooking, rinse the chicken, split the chicken in half by cutting it with heavy shears.

Tip: Don’t throw away the leftover back and neck. Store them in the freezer each time you cut up a chicken until you have enough for stock.

Simmer for an hour with water to cover and you’ll have a great base for soup.  

Wet the chicken (with your favorite beer or water) and dust both sides with the The Peach Pelican’s Grilling + BBQ Dust.

Preheat your smoker to 325°F. If you are using a grill, set it up for two zone or indirect cooking.

Put the meat in the smoker or on the indirect side of the grill. Add less of your favorite wood than you normally do (Chicken doesn’t need much smoke).

Cook for about 1.5 to 2 hours or until the temp in the thickest part of the meat without touching bone is 165°F. 

This smoked chicken is Just Peachy!

Grilled Peaches - The Peach Pelican

Grilled or Baked Georgia Peaches

with The Peach Pelican’s Sweet Darlin’ Dust

Ingredients:

1 stick unsalted butter, at room temperature

4 ripe peaches, halved and pitted

3 Tablespoons of The Peach Pelican’s Sweet Darlin’ Dust

Olive or Canola Oil

Fresh Mint or Basil

In a small bowl add the butter and stir until smooth.

Add The Peach Pelican’s Sweet Darlin’ Dust and mix until combined.  


Grill Instructions:

Heat grill to high. Brush peaches with oil and grill until soft and golden browned. 

Top each warm peach with a few teaspoons of the butter and garnish with fresh mint or basil leaves.


Oven Instructions:

Pre-heat oven to 400°F. Brush peaches with oil and bake until soft and golden browned (15-20 min). 

Top each warm peach with a few teaspoons of the spiced butter and garnish with fresh mint or basil leaves. 

You can add just the grilled peaches to salads or grilled Gruyere cheese sandwiches.
